The many ways to get rid of ham

More than a week ago, when my mom and I were on our bi-weekly trip to the supermarket to restock our refrigerator.  We browsed through the meat section, looking for a new cut of meat to try but there was hardly any.  Then my mom’s eyes suddenly landed upon the pile of ham at the far end of the aisle.  A few minutes later, our tiny shopping cart was filled with two 8-lb ham.

We baked it that very same evening and spent the next week eating meal after meal of ham.  It seemed like it just went on and on and on because after the ham bone was tossed into the Chinese porridge, all that’s left was pile and pile of meat.  So we needed to think of ways to get rid of the remaining meat without wasting any.

Honestly I think it’s quite time consuming because you cannot step away while it’s cooking, not even a minute but it’s a good time occupier. 🙂 For this recipe, I would suggest that after the ham is cooked and the meat is shed off the bone, refrigerate overnight and then put it in porridge the next day.

Other ways to rid ham

Another way we came up with is fried-rice and that got us through two dinners.  It’s quite simple, really.  All you really need is leftover rice, eggs, and shredded pieces of ham.  You stir-fry the rice and mix in the whisked eggs under high heat.  Once those two are mixed and the eggs are no long runny, add in the ham and stir to combine.

My mom had rice all her life and she began feeding me rice even before my first tooth.  So for us, rice is the daily essential but I have never thought just plain steamed white rice would be so incompatible with ham.  If you add vegetables, it’s even more incompatible.

Therefore, to change things a little, for lunch, I cooked the vegetable with noodles and just threw in the ham at the last minute to warm it up and serve.  That turned out so much better than rice.  In conclusion, it is not easy finishing an 8-lb ham when you’re only a two-some and don’t really know a lot of ways to cook with ham.
